Programs and pastry classes in France - Gastronomicom

We offer : 

 Gourmet Program (One Month, 4 weeks) 
 
Length and Content of the Program : 4 weeks with 30 hours of hands-on classes per week.
2 choices:  
15 hours pastry lessons + 15 hours cooking lessons per week
OR
15 hours pastry lessons + 15 hours Sommelier lessons per week

INTAKES:
February, April, May or September


The 4 week Pastry Module includes :
1st Week: Breads, Viennoiseries, Doughs
2nd Week: Cakes and Entremets
3rd Week: Chocolates

4th Week: Plate Desserts and Decoration

All week-ends are free.
For the French pastry classes, students work in teams to help each other and to learn together.

Gastronomic Program (3 months)
 

Length of the Program: 12 weeks with 30 hours of lessons per week, including 15 hours of hands-on Pastry classes and 15 hours of French lessons.

All week-ends are free and you have 1 week off to visit France.

This French pastry program is composed of 3 Modules, each of 4 weeks. They are structured in the same manner as the Gourmet Program Module with, of course, different pastries along with a higher level of difficulty.

For the French pastry classes, students work in teams to help each other and learn together.

 


Full Program ( 3 month course + a 4 month internship)


Length of the Program:
12 weeks with 30 hours of lessons per week, including 15 hours of hands-on Pastry classes and 15 hours of French lessons + a 4 month Internship at a Luxury Hotel-Restaurant in France.

This French pastry program is composed of 3 Modules, each of 4 weeks. They are structured in the same manner as the Gastronomic Program.

All weekends are free (except during the internship) and you have a 1 week mid-term break to visit France.



Sugar Decoration ( 15 hours)

This Program consists of 3 daily hours of Sugar Art lessons spread over 5 days.

This particular course is a first approach to Sugar Art integrating Puffed and Pulled Sugar Techniques.

It can be followed while attending another Program provided a minimum of 6 students register for the course.


An additional 400 euros will be required should the course takes place.


One Year Program: Diploma in Gastronomic Pastry

Length of the Program: 12 months with a 3 month Gastronomic Pastry course + a 3 month Gastronomic Cooking course + a 6 month internship.

Two Year Degree: Diploma in Gastronomic Food & Beverage Management


A One Year Preparatory Course at Gastronomicom similar to the normal One Year Program

+ a Second Year with: a 3 month University Level Management Course, a 3 month practical Management Course and a 6 month internship at a Gastronomic Establishment. All Management Courses are taught in French.

Students can qualify for a Direct Second Year entry if they can justify a minimum of 5 years professional experience at a Recognized Gastronomic Establishment AND an Advanced Level of French.

For the Management Diploma you have two options: 1)Cooking & Pastry 2)Service & Sommelier

All of our Teachers are Highly Qualified Graduates with vast experience in the field that they teach.

 For courses longer than 3 months you will need a Student Visa
